What is YAKBAP?
A modern recipe for delicious Korean rice with dried fruit and nuts.

His Korean name is yaksik / yakshik (약식) or yakbap (약밥). It means healing food.

One of the main ingredients of honey and honey is considered a medicine in ancient Korea.

Officially yak is one of the foods you can eat during the first full moon of the new year (on the lunar calendar) – Jeongwol Daeboreum (정월 대보름).

However, it is also used in other festivals such as the Korean New Year (Seoul), the Korean Fashion Festival (Chusok), at a wedding feast or 60th birthday party.

Still, Yaxik was acquainted with one of my favorite Korean desserts! This is also good for breakfast or snacks and is also ready to give gifts.
What’s in YAXBAP?
As you can choose in the descriptive name – sweet rice with dried fruit and nuts – the main ingredients are sweet rice (short grain glutinous rice), dried fruit (e.g.

But other types of dried fruits and nuts (e.g. cranberries, walnuts, pecans, sunflower seeds, etc.) can be used separately.

It is used for sauces, honey and / or brown sugar, soy sauce, sesame oil and cinnamon powder.

The texture is soft and sticky. The flavor is sweet, salty and loaded with healthy dried fruits and nuts. The aroma of sesame oil adds to the wonder of heaven.
When I gave my daughter Yaxik the next day for the first time, she was very happy because she thought she was getting a piece of cake in a Western style. But he said he had bitten it a little once, so that it looked really strange – ‘what did you just give me? This is not a cake! I have been cheated! ‘. It was really funny to look at his sad face. Shortly afterwards, he said he did not like it and returned it to me.

Then a few hours later, I was enjoying yaksik with my afternoon tea and my daughter asked what I was wearing? I told him that yax. Then he told me he wanted to try. I reminded him that he did not like it before but I give it to him anyway. He bit and shouted: “I love it!” And from then on without eating you love yaksik.

So why do I share this story? … if you or your family members are not accustomed to having this kind of delicious Korean dessert, you may not like it at first, but it may grow on you very quickly. Only time will tell. 🙂

P.S. I used my cuckoo rice cooker to make the recipe below. Alternatively, you can use other standard recipes such as a quick pot or even a stove-based stove.

Korea’s sweet rice skin with dry fruit and putty (9 big bars)
Great
3 cups * sweet rice (short grain glutinous rice)
2 cups * water
2 tbsp pine nuts
15 Chestnuts (about 120g, 4.2 ounces) – Peeled skin and cut into 3 or 4 small pieces (I used frozen, available at a Korean grocery store. You can use fresh ones if you can find them. Version can also be found at Korean grocery stores.)
1/4 cup dried
1/4 cup of dried cranberries
10 Dried Pitted Jujubes (Red Days) – Washed and halved

1 tbsp soy sauce
2 tbsp honey
1/3 cup dark brown sugar
2 tbsp sesame oil
1/2 tsp cinnamon powder
1/8 tsp fine sea salt
Installation (The number of equipment required will vary depending on the severity of each rental component)
1 tbsp pine nuts
2 to 3 dried juices – cleaned and cut straight at one corner and folded. Slightly cut
Evolution

1 cup * = 180 ml (using a measuring cup of rice). This equates to a standard 3/4 cup measurement.
1 teaspoon = 15 ml, 1/3 cup = 80 ml, 1/4 cup = 60 ml
How to make a sweet Korean rice with dried fruit and kits
1. Put the sweet rice in a rice pot and wash it with cold water a few times (until the water is clear). Oprin.
2. Add the cooking water and spices to the rice cooker pot and mix well.
3. Add nuts and fruit on top. Make sure these are evenly distributed in the pot.
4. Set the “Multi Steam” function for 35 minutes and cook. – this is based on my cuckoo rice cooker system

Notice
As I mentioned earlier, this recipe is used with my rice cook, which is a short way to make yak. The traditional method (steamer) can take up to 7-10 hours of preparation and cooking time. Sure, my version of this recipe tastes normal! 🙂
Axial shape can be round or square. It does not have to be rectangular. You can use any cookie launch settings (e.g. core) to make your yax with your favorite shape. In this case, the decoration will need to be done after cutting.
Although yak can be eaten cold (from the fridge), it tastes better when left outside at room temperature for 20-30 minutes to soften slightly. If stored in the refrigerator, remove and refrigerate for 3-4 hours at room temperature. (They can be left overnight for breakfast the next day.) It can be microwaved (about 2 minutes if frozen).
If you want a soft and very sticky yolk and / or if you will keep it for more than 2 days, I recommend soaking the rice 1 hour before cooking (after step 1).
